Scampi Diabolique

Scampi Diabolique

This recipe is a culinary fast food! Scampi Diabolique is one of the most traditional Belgian dishes and definitely one of my favourite. I’ve had many different versions in the past and it took me some time to figure out my “ideal” recipe, but after trying some variations I finally nailed the ingredients and my Diabolique became a favourite with a Belgian’s approval (thanks hubby).

In my version I try to reproduce the silky creamy sauce  where the ‘scampi’ can have all the attention, so unlike other recipes out there, I skip the bell peppers, carrots, curry and some other ingredients.

This dish is certainly effortless and flexible : you can serve it as an appetizer, or main dish and the side options couldn’t get any simpler: be it french fries (like Belgians do) fresh slices of bread, or rice, you choose! It is definitely a great choice in cold days since it has some spiciness to warm up and a fulfilling tasty sauce.

Spicy Tiger Shrimps with Onion Mayonnaise

Spicy Tiger Shrimps with Onion Mayo | www.notafoodexpert.com

I’m a big sea food fan, and so is my fiancé and last week we had these very well prepared shrimps in a restaurant in Waregem and I immediately decided to make my own inspired version at home.

But when it comes to sea food, quality really matters specially if the star of the dish is the shrimp, so while we were still having lunch he came up with the brilliant idea of going to his best friend’s fish store, Viscentrale  to buy some quality Tiger Shrimps.

And I must say I have no regrets! Good sea food doesn’t need much to taste great as long as it’s fresh and from a reliable source and the ones we had were a hit and I will definitely make them again!

Smoked Salmon Sandwich

Smoked Salmon Sandwich | www.notafoodexpert.com

It’s not every day that we feel inspired or have plenty of time in hands to cook. So of these days people here in Belgium usually go for a sandwich. Which can be a great idea since you can whip it up fast, not a lot of ingredients required, and almost no dirty dishes at the end (which I really appreciate). So let me go straight to the point and share the recipe of this beauty.

Roasted Whole Trout

Roasted Whole Trout | www.notafoodexpert.com

The other day I was walking in the supermarket, wondering what would I cook for dinner and then I  as I was passing the fish counter, I noticed these lovely Trouts from the Belgian Ardennes . Since I love fish, I thought I should give them a try.

This was the first time I cooked whole fish by myself, and I can assure you it’s VERY easy (once they’re cleaned and gutted of course) and the trouts are ready to serve in only 15- 20 min, which also means it’s a very fast option to cook! The presentation of this dish is great and I can assure you , everybody is going to be impressed.

Seared Garlic and Butter Scallops

Seared Garlic and Butter Scallops | www.notafoodexper.com

Ever since I’ve moved to Belgium, I started paying more attention to the scallops. every time I would buy some fish they were there, white and shiny. And of course as curious as I am I had to try them out. Why not jump into another recipe challenge… So I did my homework one of these night I couldn’t sleep, reading all about scallops taste, recipes, how to prepare them perfectly and I’m not quite sure I nailed them yet! But I have to be honest, at the same time they’re super easier, fast to cook they also required attention so they don’t get overcooked.
