High Up in The Nest

Sunset chaser

It’s been a week or so since I came back from the humid and hot Philippine (is)land(s) and I couldn’t wait to talk about one of the best choices of the trip: The BirdHouse.

The BirdHouse is a self entitled Glamping Experience, and whether or not you are acquainted with the term Glamping, you need to hear this one out cause I’m here to talk about food.

Date Truffle

Date Truffle

I’ve realised that if you want to change your eating habits, you need to have good choices to go for when the cravings hit you and this Date Truffle is everything you asked for: sweet , chocolatey , full of good fats, and very tasty!!!

The recipe only requires a few ingredients and it is 100% vegan. Go ahead and give it a try. I’m sure you won’t regret!

Ingredients

  • 30 whole pitted dates
  • 2/3 roasted almonds
  • 2 tbsp. unsweetened cocoa
  • 1/2 cup of shredded unsweetened coconut
  • 1tbsp. coconut oil
  • Pinch of salt

Instructions

  1. Place almonds in a food processor; process until finely ground.
  2. Add dates; process until finely ground.
  3. Add the rest of ingredients and pulse until combined then check if the mixture is firm enough to form the balls .
  4. Scoop about 2 teaspoons cocoa mixture with a spoon, and roll into a ball.
  5. Roll the balls in the desired coatings and place them on a plate.
  6. Refrigerate for one hour.

Make sure you don’t over eat the truffles because although it’s a very healthy version, it has a considerable amount of calories!

Quinoa Risotto

Quinoa Risotto | www.notafoodexpert.com

I love the traditional Italian risotto, packed with carbs and cheese…. mmmm such comfort food! But for the times I’m worried about being healthier I end up cooking this lighter version with quinoa that is considered a super food, rich in proteins and antioxidants! This dish is a great option both for lunch or dinner and goes easily with everything, and if you skip the cheese you have a vegetarian dish!

Pesto Pasta

Pesto Pasta | www.notafoodexpert.com

This is a traditional Italian recipe, fresh and tasteful and so fast and easy to make! I made this Pesto to eat with integral pasta, but honestly this can go with sandwich, pizza, toast, bruschetta…  If you want to eat it with pasta ,all you have to do is cook up some pasta (any kind) slather on the pesto and of course to top sprinkle some Parmesan, and you’re good to go.
